Maple waffle, roasted ham, iceberg lettuce and maple vinegar



INGREDIENTS

• 4 Bel Gaufre maple waffles

• 4 1/4 inch thick slices of ham

For the ham

• 1 cup buttermilk (or clarified butter)

• 1 cup flour

• 1 cup bread crumbs

• 1/2 tsp. dried thyme

• 1/2 tsp. dried basil

• 1/2 tsp. dried oregano

• 1 tsp. paprika

• 1/2 tsp. ground coriander

• 1 pinch ground cayenne

For the dressing

• 2 tbsp. maple syrup

• 2 tbsp. yellow mustard

• 4 tbsp. wine vinegar

• 1/2 cup olive oil

For the garnish

• 4 large quarters of iceberg lettuce

• Thin slices of red onion

PREPARATION

Place the ham in the buttermilk and let rest for 1 hour. Put the rest of the ingredients in a resealable bag and mix to create spiced breadcrumbs. Coat the ham with the breadcrumbs by pressing well to ensure the breading sticks. Place the ham in a pan and cook with a little oil for 2 minutes per side, turning gently. Reserve in an oven preheated to 325 °F with maple waffles for 10 minutes.

Whisk together all the ingredients for the dressing and set aside. Serve maple waffles topped with ham, a large quarter of iceberg lettuce and slices of red onion. Generously drizzle with vinaigrette.
