Clafoutis with waffles and strawberries

• 8 Bel Gaufre vanilla waffles chopped into pieces

• 3 eggs

• 1 cup fresh strawberries, trimmed, washed and chopped

• 1/2 cup softened cream cheese

• 1/2 cup icing sugar

• 2 tbsp. vanilla

Butter a baking dish and place the waffle bits inside. In a small bowl, beat the cheese and sugar. Add the eggs and vanilla. Beat until texture is smooth. Pour the mixture evenly over the waffle bits and gently press the waffles with a spatula to absorb the mixture. Sprinkle with pieces of strawberries. Allow the mixture to sit overnight in the fridge.

The next day, take the dish out of the refrigerator about half an hour before cooking. Preheat the oven to 375 °F and cook covered for 40 minutes. Remove the foil and cook again for 30 minutes uncovered.
