• Bel Gaufre maple waffle
• 2 egg yolks
• 150 g butter
• Freshly ground fine salt and white pepper
Melt the butter without letting it heat up. In a water-bath, mix the egg yolks with 1 tbsp. of salted and peppered water. Whisk. As soon as the mixture begins to thicken, gradually incorporate the melted butter. Stir until desired consistency, then reserve.
In a pan, sauté a piece of ham of the thickness of your choice. Heat a maple-flavored waffle in the oven at 350 °F for 3 minutes. Place the slice of ham on the waffle, then cover with hollandaise sauce and serve.
