INGREDIENTS
• 2 Bel Gaufre maple waffles
Chocolate hazelnut mousse*
• 1 cup 35% whipping cream
• 1 tbsp. sugar
• 1 tbsp. chocolate-hazelnut spread (Nutella style)
Chocolate sauce*
• 2 tbsp. cream
• 1/4 cup (1.5 oz) chocolate chips
PREPARATION
Step 1. Chocolate hazelnut mousse
Whip the cream with the sugar until stiff peaks are obtained. Fold in the chocolate-hazelnut spread with a soft spatula.
Step 2. Chocolate sauce
In a microwave-safe bowl, heat the cream until it simmers, about 30 seconds. Remove from the microwave and add the chocolate chips. Stir until chocolate is melted and sauce is thick.
Step 3. Plating
In a plate, first place a maple waffle and spread it with the chocolate hazelnut mousse. Cover with a second maple waffle. Top with chocolate hazelnut mousse and chocolate sauce. Decorate with fresh fruit to taste and serve.
VARIATIONS
-Mocha: Replace the chocolate-hazelnut spread in the mousse with strong coffee.
-Buttered rum: Replace the chocolate-hazelnut spread in the mousse with brown rum and the chocolate sauce with a toffee sauce.
-Chocolate-raspberry: Replace the chocolate-hazelnut spread in the mousse with raspberry jam. Decorate with fresh raspberries instead of mixed fruit.
-S’mores: Replace the chocolate hazelnut mousse with marshmallow spread. Sprinkle with graham crumbs.
-Chocolate-peanut: Replace the chocolate-hazelnut spread in the mousse with peanut butter and the chocolate sauce with a caramel sauce.
