Ice waffle sandwich with honey & lemon coulis


• 8 Bel Gaufre vanilla waffles

• 2 cups vanilla ice cream

• 4 tbsp. honey

• The juice of 2 lemons

• 1 tbsp. butter

• 1 cup 35% cream

• Berries and mint leaves (optional)


Let the ice cream soften a little. Garnish the waffles and assemble into sandwiches.

Place in the freezer for 1 hour.

Meanwhile, put the butter and honey in a saucepan and bring to a boil for 2 minutes. Add lemon juice and cream and cook on low heat for 6 minutes. Serve waffles drizzled with still hot coulis and garnish with berries and mint leaves.
